This gluten-free cookie recipe is quick and easy, requires simple ingredients, can be made all in one bowl, and makes 8 delicious, warm cookies in under 20 minutes.

It’s perfect for when you:

  • are having unexpected visitors,
  • need to quickly provide a substitute for a glutenous treat that ‘everyone else’ is eating,
  • don’t want leftovers, ahem…what diet?
  • don’t want to run to the store and pay a ridiculous price for sub-standard gf cookies.

So grab your one medium sized bowl, and get started. There is no dough-resting required, just mix in the one bowl and get them in the oven!

Ingredients Required For GF Choc-Chip Cookies

This gf cookie recipe requires only simple ingredients, but if you’re wanting to try substituting here, I’m just going to go ahead and explain what each ingredients role is here:

  • Butter – you can use either salted, or unsalted butter. Salted butter adds some extra flavor, but unsalted butter works too, and you can always had a little salt to taste (I do). Melting the butter, rather than just softening it, works best too.
  • Brown sugar – adds moisture to give the cookies a chewy center and a delicious caramelly taste.
  • Granulated white sugar – (aka ‘white sugar/caster sugar). White sugar caramelizes faster, and helps to give the cookies their crispy edges.
  • Baking Soda – this gives the cookie a chewy, doughy center.
  • Gluten-Free Flour: any gluten-free all-purpose flour (aka ‘gf plain flour’) works well here, and provides the base of these cookies.
  • Vanilla extract – you don’t even need the posh vanilla extract here. The vanilla extract works as a seasoning, helping to bring out the flavor of the other ingredients.
  • An egg – not only does the egg enrich the flavors, but the yolk in particular acts as an emulsifier to bind all the cookie ingredients together.
  • Chocolate Chips – choose chips of your choice, and level of sweetness, or simply whatever you have on hand.

Ingredients
  

  • 90g butter, melted
  • ⅓ cup brown sugar
  • ¼ cup white granulated sugar
  • 1 cup gluten free all-purpose/plain flour
  • ½ tsp baking soda
  • pinch of salt
  • 1 tsp vanilla extract
  • 1 egg
  • ½ cup chocolate chips

Instructions
 

  • Preheat oven to 360°F (180°C) and line a baking tray with baking paper/parchment.
  • Melt 90g butter, in a medium size bowl. Add ⅓ cup brown sugar and ¼ cup white granulated sugar and combine well.
  • To the same bowl, add 1 cup gluten free all-purpose/plain flour, ½ tsp baking soda, a pinch of salt, 1 tsp vanilla extract and 1 egg. Mix well, making sure that all ingredients are combined.
  • Add ½ cup chocolate chips and gently stir through.
  • Scoop 8 balls of cookie dough and place on your baking tray, making sure to allow space between each cookie for a little spreading.
  • Bake the cookies for about 12-14 minutes (or until the edges are set and the cookie is beginning to turn golden brown). Be careful not to over-bake your cookies, otherwise they won't be soft and chewy in the middle. 
  • Remove from the oven, and allow to cool on the sheet for 5 minutes, before transferring to a wire rack to cool completely.
