This quick and easy gluten-free chocolate chip cookie recipe will give you 8 fresh and delicious cookies ready to go in under 20 minutes! Perfect for when you need a gluten-free treat in a hurry.
Preheat oven to 360°F (180°C) and line a baking tray with baking paper/parchment.
Melt 90g butter, in a medium size bowl. Add ⅓ cup brown sugar and ¼ cup white granulated sugar and combine well.
To the same bowl, add 1 cup gluten free all-purpose/plain flour, ½ tsp baking soda, a pinch of salt, 1 tsp vanilla extract and 1 egg. Mix well, making sure that all ingredients are combined.
Add ½ cup chocolate chips and gently stir through.
Scoop 8 balls of cookie dough and place on your baking tray, making sure to allow space between each cookie for a little spreading.
Bake the cookies for about 12-14 minutes (or until the edges are set and the cookie is beginning to turn golden brown). Be careful not to over-bake your cookies, otherwise they won't be soft and chewy in the middle.
Remove from the oven, and allow to cool on the sheet for 5 minutes, before transferring to a wire rack to cool completely.
