These honey joys were (and still are) a childhood favourite.

Made with just 4 simple ingredients, they are easy to make and require only one simple change to make them gluten-free.

And nobody can tell the difference!

Ingredients

To make these delicious gluten free honey joys, you will need the following 4 ingredients:

  • Gluten-Free Cornflakes
  • Sugar
  • Butter
  • Honey

Instructions

Honey joys are easy to make, you will just need to start with a large saucepan:

Melt honey, butter and sugar together over a gentle heat.

Allow the mixture to bubble slightly.

Mix in the cornflakes and then work quickly to fill the cupcake cases.

Hint: be careful not to overcook the honey joys in the oven. Go for a slightly brown colouring to them (approximately 10 minutes) and remove from the oven. As they cool they will continue to set.

  • Cupcake Tray

Ingredients
  

  • 4 cups Gluten Free Cornflakes
  • ⅓ cup Sugar
  • 90 grams (3.2oz) Butter
  • 1.5 tablespoons Honey

Instructions
 

  • Preheat oven to 150C or 300F
  • Line tray with cupcake cases (I also lightly spray them to avoid sticking)
  • Melt butter, sugar and honey together in a large saucepan until the mixture becomes a little bubbly.
    ⅓ cup Sugar, 90 grams (3.2oz) Butter, 1.5 tablespoons Honey
  • Add in the cornflakes and mix together well.
    4 cups Gluten Free Cornflakes
  • Work quickly to fill all the cupcake cases.
  • Bake in the oven for 10 minutes, until you notice them slightly browning. Remove from oven and allow to set and cool completely.

Storage

This recipe can be made the day before you require them and can be kept in an airtight container for up to a week.

Honey joys are not suitable for freezing.

Jelly Orange Slices

Whether you call these 'jello' or 'jelly' orange slices - these are a fun children's party treat that are easy to make, taste delicious and look very enticing.

Jelly is gluten-free, but it's always best to check the packaging each time, just to be sure some hidden gluten nasties haven't found their way in.

For a recent birthday party at home, we went with the traffic light colours of red (raspberry), green (lime) and orange and they were very popular.

Ingredients To Make Jelly Orange Slices

To create these jelly orange slices yourself, you will need the following:

  • Oranges
  • Boxes of jelly

A muffin tray will also come in very handy for holding the orange halves in place while the jelly sets.

Instructions

Mix up your jelly crystals according to the packet and allow to cool slightly.

Wash and cut the oranges in half top to bottom (so you don't get leaky oranges). Remove all flesh and juice from each orange.

Sit the orange halves into a muffin tray so they are stable. Pour in the jelly liquid and allow to set in the fridge.

Once the jelly is set, cut each orange half into half again to create orange jellies!

Hint: make sure to cut the orange top to bottom so that you aren't creating any leaky holes in the orange halves! Use a tablespoon to gently remove the orange flesh and juice, again without creating any holes in the orange skin.

Ingredients
  

  • 9 Oranges
  • 3 boxes Jelly Crystals

Instructions
 

  • Wash and cut oranges in half (from top to bottom).
    9 Oranges
  • Gently scoop out the flesh and juice from each orange half and sit them in the muffin tray.
  • Make up the jelly crystals according to the packet instructions.

  • Pour the jelly mixture into the orange cups and refrigerate until the jelly is completely set (usually at least 4 hours).
  • Using a sharp knife, cut each orange half into half again and plate them for serving.

Storage

Store the set jelly oranges in an airtight container in the refrigerator. These will keep well for a few days.

These ingredients aren't suitable for freezing.

Top tip

I usually make these the day before so that I know the jelly will be set firmly enough.

Chocolate Crackles Gluten-Free

These classic chocolate crackles are a old time favourite for kids and adults alike. The chocolatey, coconutty crunch - delicious!

Best of all, they are quick to make and easy to adapt to gluten-free.

Perfect for children's birthdays parties and bake sales, these gluten-free chocolate crackles can be made in under 15 minutes and ready to serve shortly afterwards.

The photos shown here are from my youngest's recent birthday party. As many of the kids attending are still quite little, I made a mix of normal cupcake-sized crackles as well as some mini-cupcake sized portions.

Ingredients Required For GF Chocolate Crackles

To make these gluten-free chocolate crackles, you will need the following ingredients:

  • Gluten-free Rice Bubbles/Krispies
  • Icing/Powdered Sugar
  • Copha (or Coconut Oil)
  • Desiccated (or finely grated) coconut
  • Cocoa powder

How To Make Chocolate Crackles

One of the many great things about chocolate crackles, is just how easy they are to make:

Don't worry if it doesn't look too chocolatey just yet!

Add the melted copha to the dry ingredients - the copha will sink to the bottom so keep mixing.

Spoon mixture into cupcake cases and place into the fridge to set.

Hint: make sure that you aren't left with a pool of copha/coconut oil at the bottom of the bowl. This helps to bind and 'set' the chocolate crackles to make sure that each crackle isn't too 'dry'.

Ingredients
  

  • 4 cups Gluten Free Rice Bubbles/Rice Krispies
  • 1 cup Icing Sugar/Powdered Sugar
  • 1 cup Desiccated/Grated Coconut
  • 250 grams Copha *see below for variations
  • 5 tablespoons Cocoa Powder

Instructions
 

  • In a large mixing bowl, combine the gluten-free rice rubbles/krispies, icing sugar, coconut and cocoa together.
    4 cups Gluten Free Rice Bubbles/Rice Krispies, 1 cup Desiccated/Grated Coconut, 5 tablespoons Cocoa Powder, 1 cup Icing Sugar/Powdered Sugar
  • Melt the Copha in a saucepan on a low heat. Add to the mixing bowl and stir all ingredients well.
    250 grams Copha
  • Spoon the mixture into the cupcake cases and refrigerate until firm (usually 30 minutes).

Variations

Altering the recipe slightly can add a unique twist on the old-fashioned chocolate crackles:

  • Gluten-free Cocoa Pops - cocoa pops can be used in place of the rice bubbles/krispies but they will be extra chocolatey - in this case, you can forgo the cocoa altogether or simply add 2 tablespoons.
  • Deluxe - add some gluten-free chocolate buttons or sprinkles to the top of the crackles.

Storage

When stored in an airtight container in the fridge, chocolate crackles can last for up to a week.

Chocolate crackles don't freeze or thaw well.

Top tip

For smaller children, or when there are lots of treats on offer, it can be a good idea to provide both the standard cupcake size crackles and also some mini cupcake sized crackles too. This also prevents wastage at children's birthday parties when the little eyes can be bigger than the tummies 🙂

FAQ

What Can I Use Instead of Copha?

Coconut oil can be substituted for copha.

Melted copha helps to bind the ingredients together and then helps it to 'set'. It also gives an ideal crunch to the chocolate crackles, all of which can also be achieved with melted coconut oil and then allowing the recipe to set in the fridge.

Marshmallow Ice Cream Cones (Gluten-Free)

These gluten-free marshmallow ice cream cones are perfect for kid's birthday parties and bake sales when a sweet, novelty treat is required.

They look great, have a lovely sweet vanilla taste and are easy to make gluten-free and egg-free - just be sure to check the cones and the sprinkles that you are using.

GF Marshmallow Cones - Ingredients Required

Homemade marshmallow requires surprisingly few ingredients:

  • Water
  • White Sugar (granulated/castor sugar works best)
  • Gelatin
  • Vanilla essence
  • Sprinkles
  • Gluten-free ice-cream cones - these small gf cones by Eskal work really well. They are sturdy and strong for gluten-free products and as they can be stood up, it makes pouring the marshmallow into them, even easier. Alternatively, the 'pointy' type cones will also work too.

Marshmallow Instructions

To make the marshmallow, you first need to bring the water, sugar and gelatin to a gentle boil and allow to simmer for 10 minutes.

Once boiled, allow mixture to cool for 10 minutes.

Once cool, add the vanilla essence and food color (if using). The mixture will be a little yellow in color but will transform to white marshmallow....

The mixture becomes thick and glossy.

Make your job easier by setting up the cones in a container that will support them while you are filling them with the sticky marshmallow 🙂

Ingredients
  

  • 12 GF flat-bottomed ice cream cones
  • 1.5 cups white sugar
  • 1 cup water
  • 1.5 tablespoons gelatin
  • 1.5 teaspoons vanilla essence
  • Sprinkles *check for gluten-free

Instructions
 

  • Combine the sugar, water and gelatin together into a pot, stirring until combined.
    1.5 cups white sugar, 1 cup water, 1.5 tablespoons gelatin
  • Slowly bring the mixture to a soft boil, then reduce heat to low for 10 minutes.
  • Remove the pot from heat and pour the liquid into your mixer bowl. Allow to cool for around 10 minutes.
  • Add in the vanilla and food color (if using) and mix until it becomes thick and glossy - approximately 10 minutes.
    1.5 teaspoons vanilla essence
  • Lay out the cones in a container so they are supported.

  • Spoon, pour or pipe out the mixture into the cones and fill to the top. Add sprinkles and allow to set for at least an hour.

Creamy Chicken Pasta - Gluten-Free & Super Easy

This gluten-free, creamy chicken pasta is a winner in our home.

It's quick to make, requires very few dishes and the taste can be jazzed up for adults (red pepper flakes - yum!) or kept to a minimum for more sensitive tastebuds.

It makes a lot, and the leftovers can be reheated the next day for a delicious lunch at home or in a thermos.

Gluten-Free Creamy Chicken Pasta - What You Will Need:

Gather up the following to make this delicious creamy chicken pasta:

  • Chicken - breast or thigh is fine for this recipe.
  • Gluten-free penne - I've used Barilla GF Penne here
  • Butter - oil can be used instead
  • Onion
  • Garlic - fresh or jar works well.
  • Gluten-free cornflour/cornstarch - used to thicken the sauce a little.
  • Milk
  • Cream
  • Parmesan cheese - or any other cheese to your taste
  • Chives and/or parsley to taste
  • Salt and pepper to taste

Creamy Chicken Penne

This gluten free chicken pasta recipe is a simple, yet delicious meal for the whole family.

Ingredients
  

  • 450 g /1 lb chicken, diced
  • 340 g /12 oz gluten-free penne I've used Barilla GF Penne for this
  • 30 g butter
  • 1 small onion, diced
  • 1 teaspoon garlic (minced or crushed)
  • 1 tablespoon gluten-free cornflour/cornstarch
  • 2 tablespoon milk
  • 1.5 cups cream
  • ¼ cup parmesan cheese, grated
  • chives, parsley to taste
  • salt and pepper to taste

Instructions
 

  • Boil a large pot of water, salt and add penne. Cook until al dente. Drain and set aside.
  • Heat a large pan and melt butter, add garlic and onion until lightly brown.
  • Add diced chicken, stir to combine and allow to brown.
  • In a small bowl, make a cornflour/cornstarch mix by adding a tablespoon of milk and creating a thick paste. Add this to the chicken in the pan, then add cream and any remaining milk.
  • Stir continuously until the sauce has thickened. You can add more milk here if the sauce is too thick.
  • Add parmesan cheese, season with salt and pepper and allow chicken to cook fully.
  • Stir in the cooked pasta and gently combine and coat the penne with the sauce.
  • Top with parsley, chives and/or chili flakes (as shown in picture bottom left)

Notes

  • This dish is very versatile - you can:
    • add diced bacon at the same time as the onion, 
    • mix through baby spinach at the end,
    • mix through cut cherry tomatoes, fresh basil etc.
    • spice it up with red pepper flakes.

This recipe can be kept in the fridge for up to two days, just be sure to thoroughly reheat any leftovers due to the chicken and cream components of this dish. I haven't tried freezing it, as it never lasts that long in our home.

Blueberry Banana Smoothie

This blueberry banana smoothie recipe is so simple and quick to make.

It requires very few ingredients and has no added sugar, making it perfect for breakfast or an afternoon snack. With a food processor or powerful blender, you can easily whip up this naturally creamy, cold smoothie bliss.

All without yoghurt, nuts or oats and you can easily substitute the milk to make it dairy free - making it allergy friendly too.

My kids love to have one after school when the 'hangries' are about. It's nutritious, filling and really satisfying.

Blueberry Banana Smoothie Without Yoghurt

For this blueberry banana smoothie recipes, I don't use yoghurt.

In fact, because of the frozen berries and the creamy banana, you really don't need it. A cup of milk is all the liquid you really need to be able to blend this up nice and smoothly - yet this smoothie still tastes creamy, just minus the extra calories.

Here's what you need:

  • Frozen blueberries
  • Frozen bananas - frozen is best, however room temperature will work too, it just won't be as cold and 'thick shake' like.
  • Milk - you can use cows milk, coconut, almond or any other type of milk here, it won't alter the consistency of the smoothie much, however it can adjust the taste if you are using a strong milk-alternative.
  • Ice - important for the cold, thick, chilled consistency but in a pinch you can leave out.
  • Vanilla extract - this is a personal taste, but I find it just makes the whole flavour just 'pop' a little.

Are blueberry smoothies good for you?

Blueberry smoothies are a great source of fiber, vitamin C, and antioxidants. They can help boost your immune system and provide other health benefits.

Whilst blueberries are superfoods, its what you add to your smoothie that can make them unhealthy. Too much added sugar or high fat ingredients such as ice-cream can really change the game!

How do you make a smoothie thicker without yogurt?

One way to thicken a smoothie without adding yogurt is to use frozen fruit and ice like in the above recipe.

If you have a high-powered blender, you can also add some liquid such as water or milk to help the ingredients blend together. You don't need to add any more than the above recipe though.

Do you have to put ice in a smoothie?

No. The ice however, will help to keep the drink cold and make it thicker. If you don’t want to add ice, you can use more frozen fruit or just add more liquid to the blender. It just won't be so 'thick shake' like in consistency.

What is the difference between a smoothie and a milkshake?

A smoothie usually contains yogurt or milk, whereas a milkshake contains ice cream

. Smoothies are also typically healthier than milkshakes, as they contain more fruits and vegetables.

Can you add spinach to this smoothie?

Yes, you can put spinach in this smoothie.

It will however, change the color of the drink but it will still taste good. Spinach is a great source of fiber, vitamin C, and antioxidants. It also has anti-inflammatory properties.

This is a great easy recipe for gluten-free banana bread. We make it a lot around here.

It's quick to pull together, requires only simple ingredients and is versatile for a quick snack or can be toasted for breakfast with fresh bananas and maple syrup. You can even add a few chocolate chips to this banana bread recipe, without it compromising the structure of the bread.

If you need to use up some ripe bananas, need to prep some school lunch-box snacks or have some visitors arriving, this is a great go-to recipe.

You Will Need:

  • Bananas
  • Butter

Ingredients
  

  • 3 ripe bananas, mashed
  • 125 g melted butter
  • 1.5 cups gluten-free plain/all-purpose flour
  • 2 eggs
  • ½ cup brown sugar
  • 2 tablespoon maple syrup
  • 2 tablespoon milk
  • 1 tablespoon vanilla essence/extract
  • 2 teaspoon baking powder

Instructions
 

  • Heat oven to 175C/350F and grease and line a loaf tin - set aside.
  • Combine the melted butter, maple syrup, milk, eggs and brown sugar together in a large bowl.
  • Add in mashed banana.
  • Add flour, baking powder and gently mix all together (don't over-mix).
  • Pour mixture in the loaf tin and bake for 40 minutes or until set.
  • Allow to cool completely before slicing!

Notes

  • You can easily add ½ cup of choc chips if you want it a little sweeter, or try ⅓ cup coconut (desiccated or shredded coconut works best).
  • Make sure the oven is at temperature before putting the loaf tin in to start baking.
  • Don't be tempted to add extra banana in - see below note!
  • This banana bread (just like any gluten-free baking really) needs to cool before you attempt to slice it.

What happens if you over mix banana bread?

If you over mix banana bread, it can result in a tough texture. To avoid over mixing, try using a mixer on low speed or mix by hand with a wooden spoon. You don't want to mix the ingredients for too long, just long enough until everything is combined.

Why Does banana bread take so long to cook?

Banana bread can take a while to cook because the bananas add a lot of moisture to the bread.

But, you don't want to over bake it, or it will be dry. A good way to tell if banana bread is done is to insert a cake tester or toothpick into the center - if it comes out clean, it's done.

What happens if you put too much banana in banana bread?

If you put too much banana in your bread, it will be very heavy and dense. It can look undercooked in parts (when you slice it) and can be harder to bake evenly.

A good rule of thumb is to use ½ - ⅔ cup of mashed banana for every 2 cups of flour in the recipe. This should give you a moist, but not gooey, banana bread.

Gluten-Free Banana Cake (Easy & No Fancy Ingredients)

Honestly, this gluten-free banana cake is delicious! It's easy to make, with simple ingredients and it doesn't take long to bake.

You can serve it warm with ice-cream or custard or leave it to cool and ice with cream cheese topping - it makes a great morning or afternoon treat. Nobody can even tell it's gluten-free!

Ingredients To Make A Gluten-Free Banana Cake

I promised no fancy ingredients in this banana cake recipe and I wasn't kidding. You will only need:

  • Bananas: the ones that are starting to look a little 'old' are best as they produce a slight sweetness. I wouldn't recommend frozen banana in this cake though - if you have frozen banana to use, try this recipe instead: Easy, Healthy Chocolate Banana Smoothie (GF & NF)
  • Gluten-Free Flour: we use a commercial gf self-raising/self-rising flour, however I have included a substitute below if you are using all purpose/plain gluten-free flour instead.
  • Eggs
  • Vanilla: we've used a vanilla extract to provide a lovely light flavor to the cake which doesn't overpower the banana taste.
  • Butter
  • Brown Sugar: whilst you can use a white sugar, the brown sugar in this gf banana cake helps with keeping the cake moist, so I recommend using it.
  • Baking soda: also called bicarbonate soda, this is an essential ingredient to make this fluffier, gluten-free cake.
  • Milk: you can use a milk of your choice, but we've used your generic dairy milk here.

Easy Gluten-Free Banana Cake

This gluten-free banana cake recipe is a keeper! It requires simple ingredients, is quick to make and has a lovely light, moist texture - perfect for morning or afternoon teas.

Ingredients
  

  • 3 ripe bananas, mashed
  • 125 grams butter
  • 2 eggs room temperature
  • ⅔ cup brown sugar
  • 1.5 cups gluten-free self raising/self-rising flour *see below for substitutes
  • 1 tablespoon vanilla extract
  • ½ teaspoon bi-carb soda
  • ¼ cup milk

Instructions
 

  • Heat oven to 175C/350F.
  • Grease and line a cake tray (I tend to use a rectangular brownie pan)
  • Cream butter and sugar together, then add eggs and vanilla.
  • Add mashed banana to wet mixture and combine.
  • Gently fold in the flour, soda and milk until most of the lumps are gone. Be careful not to overmix here as it can affect the 'fluffiness' of the banana cake.
  • Bake in oven for 30-35 minutes or if using a round dish, you may need to add another 5 minutes. Either way, check on the cake at 30 minute mark and test with a skewer. If the skewer comes out clean and the cake gives a slight 'bounce' when touched on top, it's ready!
  • Allow to cool completely.

Notes

  • If you don't have gluten-free self-raising/self-rising flour on hand, you can substitute it with gluten-free plain/all-purpose flour instead. However, you will also need to add 1 teaspoon of baking powder for this recipe to allow the cake to rise adequately. Ideally though, use a self-raising/self-rising flour where possible.
  • Almond milk could be used instead of dairy milk.

Easy, Healthy Chocolate Banana Smoothie (GF & NF)

This healthy chocolate banana smoothie is so easy to make and tastes far 'naughtier' than it really is. It uses simple ingredients, can be made in under 5 minutes and is a winner, even with the fussiest eaters!

Creamy, smooth, chocolaty, refreshing and not to mention filling for hungry tummies. Perfect for after a hot day at school, weekend sports or just a great afternoon snack for all.

Ingredients To Make Banana-Choc Smoothies

Frozen bananas: in our fruit bowl, if a banana even starts to get a hint of 'ageing', my kids just won't touch them. It's frustrating, because ripe bananas are so much better than the bright yellow ones! Anywho, if I'm not able to bake with these bananas in the next few days, I will peel and freeze them in an airtight container. Which is when they come in handy for these type of filling smoothies!

Dates: a few medjool dates (pitted) help to give a little natural sweetness to this smoothie recipe. Dried dates will work well too, you may just need to soak them a little beforehand to soften them.

Milk: I use dairy milk, however you can easily substitute this for almond, coconut or any other preferred milk substitute.

Cocoa or cacao: I've just both and can say they are both just as good. In the below photos, I've used cocoa powder.

Vanilla: I've used a little vanilla to up the flavor a little, but you can easily leave this out if need be.

Ice: this is just a preference, but my kids love this smoothie very ice-creamy like in texture, so in addition to the frozen banana, I add a bit of ice too. This will of course depend on the strength of your blender/food processor that you will be using.

  • 3 frozen bananas (peeled)

  • Serve! Makes 2 large smoothies, but I tend to split this mixture between 3-4 cups for my kids/visitors etc.

Are Bananas Healthy In Smoothies?


Bananas are a great addition to smoothies because they add sweetness and thickness.

They're also a good source of dietary potassium, vitamin C, dietary fiber and vitamin B6. All of these nutrients make bananas a healthy addition to smoothies.

Substitutions You Can Try

This is a healthier version of a chocolate banana smoothie, because it doesn't require ice-cream, yoghurt or added sugar. If you have a fussy eater, who can 'taste' the dates, you can reduce it to 2 dates and perhaps add some maple syrup instead.

A milk is required to provide a creamy texture, however you can easily substitute this for dairy free milk.

Raw Berry Bliss Balls (GF, DF, Vegan & Oat-Free)

It doesn't have to be summer to enjoy these berry bliss balls. They are slightly sweet to taste (from the berries and dates) but packed full of nutrients.

These bliss balls are gluten-free, vegan, dairy-free and grain-free. They do however, include nuts so if you're looking for some energy/bliss balls that are nut-free, check out these recipes instead:

A batch of these berry energy balls can be whipped up quickly with little fuss, making them perfect for last minute morning teas, school lunches, after dinner sweets and after-school snacks. They freeze well and defrost easily if you're in a pinch.

Frozen berries (mixed, blueberries, strawberries etc) all work well and make a great sweet, but healthy treat.

Berry Bliss Balls

Ingredients required

To make a batch (or two) of these popular bliss balls, you will need a food processor that can handle nuts, and the following ingredients:

  • Frozen berries: allow the berries to defrost before blending so you don't get an overly watery mixture.
  • Medjool dates: these provide natural sweetness and help bind the balls together. In a pinch, you could use dried dates, but will need to soak them slightly first.
  • Coconut: you will need unsweetened shredded/desiccated coconut, plus some extra for rolling the balls in.
  • Nuts: you could use almonds or cashews in this, however we prefer the taste of cashews for this recipe.
  • Vanilla: essence or vanilla paste both work well here.

Energy Balls The Kids Will Love (GF, NF & Without Oats)

Energy balls are a super easy, great little snack. They require very few ingredients and don't require a lot of time or waiting around. You don't need to bake them and they are very allergy friendly.

This energy ball recipe is completely gluten-free, nut-free and doesn't require oats.

You can make them as sweet or healthy as you like and they store really well in the freezer for those times you need an emergency stash of gluten free, nut free snacks.

They appear to look like chocolate, so feel free to call them 'Chocolate Balls' for fussy little eaters - It's amazing how kids react to the names we call foods and if they're willing to even try them 🙂

Really, the only downside of this recipe, is the coconut that seems to make it's way all over the kitchen!

Energy Balls

Ingredients To Make These Energy Balls GF & NF

This recipe only requires 5 simple ingredients:

Dates: I use the medjool dates, but you can certainly use dried dates if that's all you have. Just be sure to make sure that your dates have been pitted before placing them in the food processor 🙂

Cocoa: simple cocoa powder is great for this recipe to make them appear more 'chocolatey' than they really are. You can substitute this for cacao powder if you prefer.

Desiccated Coconut: this is what I use, but you can use shredded coconut or coconut flakes if you prefer. It all gets processed together anyway. I do prefer desiccated coconut for the rolling at the end though. It's personal choice though.

Vanilla: this provides a little flavour and a little liquid to the mix which helps with binding. You can use vanilla paste though and this works just as well.

Coconut oil: this helps to not only add flavour, but also helps to bind the mixture which helps with the rolling process.

  • Using a tablespoon, scoop the mixture and roll into a ball. Then roll the ball into the extra coconut. Repeat for all 12 balls.
  • Whilst they can be eaten straight away, it's best to allow them to set by placing in the fridge or freezer before serving.

Notes

  • Recipe can be doubled or tripled if you want to make some for the freezer.
  • If your mixture is too dry, try adding a little more coconut oil (not too much!) and use wet hands to roll the balls out.

Gluten-Free Pancake Bake - Easy, Fluffy Pancake Slices in A Hurry

Gluten free baked pancakes are a great way to quickly feed hungry tummies, without standing at the stove and flipping multiple pancakes when you're in a rush.

It's an easy gluten-free pancake mixture, poured into a baking tray.

It requires simple ingredients, you can make it very low-sugar, it doesn't take long to bake and provides an easy, filling breakfast or snack for gluten-free. You can use store bought pancake mixes, but see below if you would like an easy recipe to make from scratch. They are fluffy and a mix between pancake and sponge cake = delicious!

You can bake it plain (and add maple syrup or cream on serving) or top it with whatever is popular in your house, sometimes I do half/half or just a sprinkle of choc chips - we make it a lot around here:

Ingredients To Make GF Pancake Bake:

When I said it requires simple ingredients, I wasn't kidding, this is all you need:

  • Eggs
  • Butter - best to melt the butter first to achieve a smoother consistency in less time.
  • Sugar - granulated/castor sugar works best, with less mixing required 🙂 I keep this fairly low sugar and you can go even lower if you want to.
  • Gluten-Free Self-Raising/Self-Rising Flour - this is the gf flour blend that already includes a binder such as xanthan gum and a leavening agent such as baking powder. If you only have all purpose/plain gf flour, then use the same quantity but also add a teaspoon of baking powder.
  • Milk - to create the 'batter' of pancakes, milk is a must - you can substitute the milk for almond milk if desired.
  • Toppings - any toppings you desire, such as choc chips, sprinkles, berries.

  • Melt butter.
  • Whisk together melted butter, sugar and eggs.
  • Add gluten free flour and salt, before adding in the milk and combining well.
  • Pour mixture into the baking tray and top with whatever toppings you prefer (we just sprinkle them on top rather than mixing through).
  • Bake for 20 minutes or until set and slightly golden on top.
  • Allow to cool slightly before slicing.

Notes

  • These pancake 'slices' are great when served warm and you can easily add maple syrup and/or cream on top.
  • They also make a great lunchbox treat.
  • I have yet to ever have to freeze any leftovers, but I'm sure they would freeze well and then defrosted/warmed slightly in the microwave.

Gluten Free Tuna Casserole

An old, comforting favorite, this easy tuna casserole recipe is a perfect way to fill hungry tummies, quick to pull together and it's not at all hard to make it gluten free + delicious.

The traditional recipes for tuna casseroles are a nightmare for gluten free eaters. There's not only the pasta (or noodles) to consider, but also the white sauce, creamy canned soup and breadcrumbs that can present dangers.

However, this recipe is a dream. Simple gluten-free ingredients and a little bit of preparation and you can have dinner on the table quickly. It sets really well - almost like a pasta 'slice' - and makes a great lunchtime leftover the next day.

Ingredients to make Gluten Free Tuna Pasta Casserole, plus some gluten free breadcrumbs that aren't shown.

There are various ways to make a tuna casserole. This recipe is quick and requires simple ingredients. You can of course add extra flavor and spice during or afterwards (my hubby loves to add a splash of Franks Hot Sauce on top of Tuna Casserole), but here are the base ingredients you need:

  • Tuna: I used canned tuna in spring-water (avoid the one in oil) and be sure to drain it well.

  • Gluten Free White Sauce: this is a great versatile white sauce that's gluten free and adaptable. To make it you simply need gluten-free flour, butter and milk at the very least. For this recipe, we also add a little mustard (I used Dijon Mustard) and stir it in after thickening.

  • Gluten Free Penne: You will require some form of pasta or noodles - *most* types work well. I usually use gf penne or the gf shells as they collect and mesh with the sauce best.

  • Egg
  • Sour Cream: you can substitute this for milk, cream or plain Greek yoghurt.
  • Cheese (grated/shredded)
  • Gluten-Free breadcrumbs (homemade or store bought work equally well)

Ingredients
  

  • 340 g (12 oz) dried gluten free penne pasta (I've used GF Barilla Penne here)

Gluten-Free White Sauce

  • 60 g (2 oz) butter
  • ¼ cup gluten-free flour
  • 2 cups milk
  • 3 teaspoon mustard (I've use Dijon mustard for a mild flavor)

Tuna Casserole Mix

  • 425 g (15 oz) can tuna (drained)
  • 2 eggs
  • ½ cup sour cream
  • 1 cup cheese (shredded/grated)

Breadcrumb Topping

  • 20 g (1 oz) butter
  • ½ cup cheese (shredded/grated)
  • ½ cup gluten-free breadcrumbs (panko style work well)

Instructions
 

  • Preheat the oven to 180C/350F and lightly grease a rectangular oven pan (lasagne dishes work well).
  • Cook the gf penne in a large saucepan of salted boiling water following the directions on the box to achieve 'al dente'. Don't overcook it! Drain and set aside.

Gluten-Free White Sauce

  • Melt butter in a saucepan over a medium heat. Add the gluten-free flour and stir to a smooth paste.
  • Slowly add the milk and keep stirring until the mixture boils and thickens.
  • Remove the white sauce from heat and gently mix in the mustard. Set aside to cool slightly.

Tuna Casserole Mix

  • Whisk the eggs and sour cream together in a large bowl.
  • Add the gf white sauce mixture and stir together until well combined.
  • Mix in the cup of cheese and the drained tuna. Season with salt and pepper to taste.
  • Pour in the cooked pasta and stir to combine.
  • Spread the mixture into the prepared pan and smooth the surface over.

Breadcrumb Topping

  • Melt the 20g(1 oz) butter in the microwave, then add the ½ cup cheese and breadcrumbs and mix together.
  • Scatter evenly over the tuna casserole surface.
  • Bake in the oven for 30 minutes, or until set and golden on top.

To make these energy balls, you will need a food processor of some kind - one that can pulse nuts and dates together well. As for the ingredients, you will need:

  • Cashews
  • Dates
  • Coconut (desiccated/shredded works best)
  • Cocoa - cacao powder will work well too.
  • Chia Seeds - can be substituted with the same quantity of other seeds if you wish.
  • Peppermint essence or oil - this is to personal taste, but if your using a high quality food-grade peppermint oil, you will only need to use about 3 drops.
  • Salt to taste - optional.

Sandwich Skewers - A Fun Alternative To Boring Sandwiches

When you or the kids are saying 'not another sandwich', but you just don't have the time nor the ingredients to whip up something else for lunch.....these sandwich skewers are a life-saver!

Because, often when we just 'jazz' up a regular food item, it's amazing the renewed interest the kids can have. Trust me, the 'wows' I received on this 'sandwich platter' were kind of unexpected 🙂

So today, I'm not sharing a recipe as such, more a way of structuring a deconstructed sandwich....

Why Sandwich Skewers Are Amazing...

  • They make a change from normal sandwiches,
  • You can just toast the bread if it's a little stale,
  • They are more visually appealing,
  • You can use ingredients that you don't normally use in 'normal' sandwiches...cucumber? tomatoes?

Actually, this is where the 'sandwich skewer' idea is genius....my youngest loves tomato in his sandwiches, but it makes them a soggy mess if not eaten immediately. However, with the skewers, you can space them apart so they don't even lightly brush the bread = no more soggy bread!:

Items You Will Need:

  • Skewers: You will need sticks of some kind....depending on which part of the world you're in, you might call them skewers, kebabs, kebobs or something completely different. Basically you need something that will hold the sandwich 'stacks' together.
  • Bread: of course we've used gluten free bread here, but you can use any bread that you have on hand. If your bread is a little stale, you might want to toast is before 'skewering' it.
  • Sandwich fillings: Today I used what I had in the fridge.....cheese, cucumber, pepperoni and cherry tomatoes.

Easy Gluten-Free Banana Muffins

These easy-peasy gluten free banana muffins make a great lunch-box snack, or an energizing morning or afternoon tea. A great way to use up bananas that may be starting to look a little 'past it' and a great low-sugar snack for all.

This gf banana muffin recipe does not require fancy ingredients and makes 12 big muffins - or 24 mini muffins. They can be frozen for a stockpile of snacks and you can jazz them up with a sprinkle of choc-chips if you want to appease fussy little eaters or add a sweeter taste. Enjoy!

GF Banana Muffins - Ingredients Required:

Nothing really fancy is required for this very easy recipe:

  • Bananas - the riper the better!
  • Gluten Free flour - all purpose/plain gf flour works well
  • Butter - see below for possible substitutes
  • Vanilla essence - could be left out but we much prefer it in!
  • Sugar - it's a fairly low sugar recipe, but if you want you can substitute it for maple syrup.
  • Milk - it could be substituted, but I can't say I've tried to sorry!
  • Baking soda and baking powder - to give this gf recipe a little rise!

Ingredients
  

  • 4 ripe bananas
  • ⅓ cup (~60g) sugar
  • 1 stick (110g) butter
  • 2 eggs
  • 1.5 cups gluten free flour
  • ¼ cup (~30g) milk
  • 1 teaspoon vanilla essence
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder

Instructions
 

  • Heat oven to 175C/350F and grease muffin tray (makes 12).
  • Mash bananas and set aside.
  • Melt butter.
  • Mix melted butter, sugar and vanilla together well.
  • Add in the eggs and mashed banana and stir together.
  • Add all the remaining ingredients; gf flour, baking soda, baking powder and milk until combined.
  • Pour the muffin batter into the greased (or lined) muffin tin.
  • Bake for 25 minutes, until muffins are set, springy to the touch and lightly golden.

Notes

Note: 
  • The butter can be substituted for coconut oil.
  • The more ripe the bananas are (a little icky even) the better!
  • If using the mini-muffin tins, the mixture will make approximately 24 mini muffins, but be sure to reduce baking time to allow for this.
  • The sugar is fairly low in this recipe, if it's not sweet enough, you could use ½ cup instead or add some maple syrup.
  • A couple of chocolate chips added to the top of the muffins can help to entice picky eaters!

4 Ingredient Gluten-Free Chocolate Chip Cookies (Simple & Delicious)

These delicious little cookies are flourless, naturally gluten-free and made with only 4 ingredients. They have a wonderful texture and just melt in your mouth.

They can be mixed by hand if needed, quick to prepare and only take 10 minutes to bake. Be warned though, it's hard to stop at one!

The 4 ingredients...

I told you it was an easy recipe....

  • Peanut butter: any nut butter can be substituted here, though I've only ever made them with the smooth, rather than crunchy variety. Yes, it does make this an unsafe cookie to pack for school & daycare though.
  • Chocolate Chips: either milk or dark work really well here.
  • Sugar: You can easily substitute this sugar for a keto substitute or swap out the brown sugar for white sugar if you'd rather.
  • Egg: acts as a great binder for these easy cookies.

The quantities I have listed below make 12 good sized cookies, but the recipe is an easy one to double or triple if you want to.

Ingredients
  

  • 1 cup peanut butter (or any smooth nut butter)
  • 1 egg
  • ½ cup brown sugar
  • ½ cup chocolate chips

Instructions
 

  • Preheat oven to 175C/350F and line a tray with parchment/baking paper.
  • Mix peanut butter, sugar and egg together. The mixture should be smooth but thick.
  • Softly fold in the chocolate chips.
  • Scoop out tablespoon-size dough and roll into balls. You should be able to make 12 cookie 'balls'.
  • Place on the baking tray and gently press down with a fork if you want them to be a little flatter - these cookies don't spread much at all so will remain almost the shape you place them on the tray as.
  • Bake for 10 minutes in the oven, remove and allow to cool completely. I repeat....do not attempt to move them until they are cool or they will crumble.

Packed with vegetables, it can be on the table within 40 minutes and it's just as tasty eaten cold for lunches, breakfast on the go or a nutritious snack.

What can zucchini slice be used for?

This versatile and extremely forgiving zucchini slice recipe can be used for:

  • lunch boxes
  • breakfast on the go
  • after school snacks
  • a light dinner with salad
  • freezing for later
  • a savoury 'take a plate of food' to work/meeting/morning tea etc.

Zucchini Slice Ingredients

Many zucchini slices tend to use gluten flours and milk. This one doesn't. Here's what we use instead:

  • Rice Flour - a small amount of white rice flour is used to thicken and bind the zucchini slice together. You will notice that the slice doesn't rise significantly, which creates a nice, even slice that is held together really well.
  • Zucchini - a great vegetable for baking, zucchini provides both nutrition and moisture to recipes. It is really important though to squeeze as much excess water from your grated zucchini as possible though as it can affect the final texture of the slice.
  • Eggs - with 5 eggs in this recipe, it might seem like a lot, but the structure, color, protein and flavour they provide are very important to this recipe.
  • Cheese - any type of cheese will do for this recipe, just make sure it's grated/shredded. You can use less or substitute it for lactose free cheese if required.
  • Onion, bacon & corn - adding flavour, nutrition and texture, these ingredients can be substituted as per taste - just try and use similar textures and stick to about 1.5 cups in total.

  • 400 g zucchinis (grated and drained well)

  • Season with salt and pepper to taste.
  • Pour mixture into baking tray and bake for 30 minutes until lightly golden.
  • Remove from oven and allow to cool before serving.

You won't get a mushy zucchini slice if you drain the grated zucchini well first. Due to the high water content of zucchini, it's very important to make sure that once grated, you drain as much excess water from the zucchini as possible.

Waste not, want not though - the watery-green goodness that you drain can be used in smoothies, soups or pasta sauces that you may also be cooking up.

How Long Does Zucchini Slice Last?

This gluten free zucchini slice recipe will last in the fridge for up to 3 days.

It can be reheated in the microwave, oven or air-fryer, but is equally as delicious cold from the fridge.

This zucchini slice can be individually sliced, wrapped and frozen for up to 3 months.

Toast Cups With Gluten-Free Bread

These egg cups with bread are a great way to use up leftover gluten free bread. Because that gluten free bread is too expensive to be wasting, right?!

These toast cups were a quick and nutritious way to use up the end of a loaf of bread and to provide a filling after school snack for my bunch. They would make a great gluten-free breakfast full of protein or a handy lunch-box snack too.

Ingredients To Make GF Toast Cups

While this recipe can be doubled, I've made this today based on me having 6 pieces of bread to use up. The ham and corn could be substituted for bacon, a little spinach or sausage meat if that's what you have in the fridge.

Here's what I've used:

  • Gluten-free bread
  • Eggs
  • Milk
  • Cheese
  • Ham
  • Corn Kernels
  • Salt & Pepper

Because you lightly 'bake' the bread first, it creates a crispy, toasty 'cup' with which we add the 'quiche-like' mixture into before baking it altogether. Therefore, no soggy bread, but a crispy, eggy delight!
