In fact, I would say it actually elevates gluten-free cakes by creating a more moist cake, that stays fresh for days…if it lasts that long of course.

So, if you need a quick and easy gluten-free cake for a last minute morning tea, lunch-box or after-school treat, then I highly recommend stocking your pantry with a few boxes of cake mixes, and just one other pantry staple.

That way, when you’re short on time, energy, or just out of flour, eggs, oil, and/or butter, you can still make a delicious cake within 40 minutes.

2 Ingredient Gluten-Free Cake

It really is as simple as it sounds. You will need:

  • Vanilla/White/Yellow etc, boxed gluten-free cake mix (yes the cheap ones work well here too).
  • Canned fruit of choice – I often use canned peaches or apples.

Most of these cake mixes come with a frosting/icing mixture, you can add, but if they don’t, the cake is just as nice without it. In fact, this is a great cake to serve warm with ice-cream for dessert.

This is not a trick, nor a typo. You really only need a gluten-free boxed cake mix, and canned fruit, to make this delicious, moist gluten-free cake. It stays fresh for days because of the fruit!

Ingredients
  

  • 1 box white, vanilla or yellow cake mix
  • 1 can fruit in syrup, such as peaches, apples, lychees, pears etc.

Instructions
 

  • Preheat oven to 175°C/350°F.
  • Grease a 9 inch x 13 inch (or similar) baking pan.
  • In a large bowl, add both of the cake ingredients. Mix until batter is smooth (if you don't want fruit lumps in your cake, you will need to use an electric mixer of some kind).
  • Pour the cake batter into prepared cake pan. Bake for about 35 minutes or until cake is slightly golden on top.
  • If you are wanting to add icing/frosting to the cake, you can once the cake is completely cooled. However, the cake is also delicious served with cream or ice-cream for afternoon tea or dessert.
