- 250g gluten-free marshmallows (about 9 oz)

- 6 cups gluten-free rice bubbles, gf rice krispies or gf puffed rice cereal
Note: Be sure that your marshmallows and rice cereal are both certified gluten-free, as many can contain hidden gluten (especially malt extract in rice cereals).
Step by Step Instructions
Step 1: Use a rectangle-sized tray (approx. 9 x 13 inch / 23 x 33 cm) and line it with baking paper, leaving some overhang for easy lifting.
Step 2: Melt butter & marshmallows: In a large pot over low heat, melt the butter. Add the marshmallows and stir continuously until completely melted and smooth. Turn off the heat and stir in vanilla essence.
Step 3: Stir in cereal: Add the gluten-free rice bubbles and stir quickly to combine everything evenly.
Step 4: Press into tray – pour the mixture into the prepared tray. Use a lightly greased spatula or a piece of baking paper to press the mixture firmly and evenly into the tray.
Step 5: Cool & slice – let it cool at room temperature for about 30 minutes (or refrigerate for faster setting), then lift it out and slice into squares or bars.
Storage Instructions

- For longer freshness, keep them in the fridge for up to a week (they’ll be a bit firmer, but not teeth-breaking hard – and still delicious!).
