These quick and easy gluten-free Rice Krispie treats are made with just four ingredients β gluten-free marshmallows, butter, vanilla, and GF rice bubbles. Perfect for lunchboxes, parties, or a fun activity with the kids. Chewy, crispy, and totally delicious! No oven needed.
Use a rectangle-sized tray (approx. 9 x 13 inch / 23 x 33 cm) and line it with baking paper, leaving some overhang for easy lifting.
In a large pot over low heat, melt the butter. Add the marshmallows and stir continuously until completely melted and smooth. Turn off the heat and stir in vanilla essence.
Add the gluten-free rice bubbles and stir quickly to combine everything evenly.
Pour the mixture into the prepared tray. Use a lightly greased spatula or a piece of baking paper to press the mixture firmly and evenly into the tray.
Let it cool at room temperature for 30 minutes (or refrigerate for faster setting), then lift it out and slice into squares or bars.

Store in an airtight container at room temperature for up to 4 days.
For longer freshness, keep them in the fridge for up to a week (theyβll be a bit firmer but still delicious).
You can also freeze them for up to 2 months β just layer between baking paper in an airtight container.
