Gluten-Free Rice Krispie Bars

These quick and easy gluten-free Rice Krispie treats are made with just four ingredients β€” gluten-free marshmallows, butter, vanilla, and GF rice bubbles. Perfect for lunchboxes, parties, or a fun activity with the kids. Chewy, crispy, and totally delicious! No oven needed.

Ingredients
 
 

  • 100 grams butter
  • 250 grams gluten-free marshmallows
  • 1 tsp vanilla extract
  • 6 cups gluten-free rice bubbles / crisped rice cereal

Instructions
 

  • Use a rectangle-sized tray (approx. 9 x 13 inch / 23 x 33 cm) and line it with baking paper, leaving some overhang for easy lifting.
  • In a large pot over low heat, melt the butter. Add the marshmallows and stir continuously until completely melted and smooth. Turn off the heat and stir in vanilla essence.
  • Add the gluten-free rice bubbles and stir quickly to combine everything evenly.
  • Pour the mixture into the prepared tray. Use a lightly greased spatula or a piece of baking paper to press the mixture firmly and evenly into the tray.
  • Let it cool at room temperature for 30 minutes (or refrigerate for faster setting), then lift it out and slice into squares or bars.

Notes

Storage Instructions

  • Store in an airtight container at room temperature for up to 4 days.
  • For longer freshness, keep them in the fridge for up to a week (they’ll be a bit firmer but still delicious).
  • You can also freeze them for up to 2 months β€” just layer between baking paper in an airtight container.

  • 🍫 Chocolate Topped: Melt some gluten-free chocolate and pour over the top before setting.
  • 🌈 Sprinkles: Add gluten-free rainbow sprinkles before pressing into the tray for party vibes.
