Gluten-Free Pizza Scrolls
These gluten-free pizza scrolls are quick and super easy to make, using the 2 ingredient dough, and whatever toppings you have on hand. Delicious warm or cold, and perfect for lunchboxes – no boring sandwiches here!
Pizza scrolls are also ideal for parties because they’re portable, easy to eat, and tend to be enjoyed by both children and also the big kids too.
What are Pizza Scrolls?
Pizza scrolls are a humble (but delicious) snack or lunchbox treat made by rolling pizza dough (or puff pastry) with your classic pizza toppings, then slicing the roll into pieces and baking them.
They resemble cinnamon rolls, but with savory, pizza flavors. Making them perfect for gluten-free lunches and hungry tummies.

What brand is best for Gluten-Free flour?
The ‘best’ gluten-free flour depends very much on what’s available to you, but for general baking, gluten-free self-raising (or self-rising) flour is an excellent choice because it already contains baking powder, and ensures your scrolls will have a nice lift and texture.
If you only have plain (or all-purpose) gluten-free flour, you can absolutely use it, but you’ll need to add your own baking powder to get the same effect. The general rule of thumb is to add 2 teaspoons of baking powder per 1 cup of plain flour. This mimics the rising effect of self-raising flour perfectly well.
Flavour Variations
Not interested in pizza? That’s fine too. While the possibilities are endless, here are just some of the options you can use instead:
- Cheese Scrolls: Skip the tomato sauces and focus on multiple types of cheese for a cheesy version.
- Cheese and Bacon Scrolls: Use shredded cheese and crispy bacon pieces for a classic option.
- Spinach and Feta Scrolls: Add a mix of chopped spinach and crumbled feta cheese for a Mediterranean twist.
- Garlic Butter Scrolls: Spread garlic butter over the dough and sprinkle with parsley for a savoury, herby snack.
- Pesto and Parmesan Scrolls: Use basil pesto as a base, topped with grated Parmesan for a rich, aromatic flavour.
- Veggie Delight Scrolls: Load with diced vegetables like peppers, mushrooms, zucchini, or olives for a vegetarian-friendly treat.

Step By Step Instructions To Make Pizza Scrolls

Step 1: Preheat your oven to 180C/350F.
Step 2: Mix the gluten-free flour and yoghurt together in a bowl. Knead together to make a ball. Add in a dusting of flour slowly if your mixture is too wet. Once it comes together in a ball, you’re ready to sprinkle some flour on your clean surface, and roll the dough into a rough rectangle shape.
Step 3: Add your pizza sauce, your desired topping and shredded cheese:
Step 4: Roll up the dough to create a long roll/log shape. Don’t worry, it doesn’t need to look perfect!
Step 5: Cut into desired widths and place on your lined baking tray. Bake for 18-20 minutes, until golden.

Ingredients
- 1 cup Gluten-free self-raising(self-rising) flour Allow a little extra for rolling out
- 1 cup Greek Yoghurt (natural)
- Pizza sauce (check it's gluten-free!)
- 1 cup Cheese, shredded
- 1 cup Ham
Instructions
- Preheat your oven to 180℃/350℉ and line a baking tray.
- Mix the gluten-free flour and yoghurt together in a bowl. Knead together to make a ball (add in a dusting of flour slowly if your mixture is too wet).
- Once it comes together in a ball, you're ready to sprinkle some flour on your clean surface, and roll the dough into a rough rectangle shape.
- Add your pizza sauce, your desired topping and shredded cheese.
- Roll up the dough to create a long roll/log shape. Cut into desired widths and place on your lined baking tray.
- Bake for 18-20 minutes, until golden.
