Coconut Energy Balls
These coconut energy balls are the perfect snack to keep on hand. Loaded with goodness, they are satisfying and delicious!
- 1 cup desiccated/shredded coconut
- 1/2 cup nuts (we used cashews)
- 10 medjool dates, pitted
- 1/3 cup cocoa powder
- 1 tsp vanilla essence or paste
- 1 tsp coconut oil
- pinch of salt
- extra coconut for rolling
Blitz all ingredients together until mixture resembles a crumbly texture (see below picture).
Scoop out tablespoon-sized mixture and form into balls. Roll in extra coconut.
Allow to set in the fridge or freezer for 20 minutes before serving.
