Zucchini Slice - Gluten Free
This easy zucchini slice is quick to make, uses up some questionable looking zucchini and is a hit with the whole family. Eaten hot or cold, these easy slice is perfect for dinner or a light lunch.
- 400 g zucchinis (grated and drained well)
- 5 eggs
- 1/2 cup rice flour (100g)
- 1/2 cup grated/shredded cheese
- 1/2 onion
- 1/2 cup diced bacon or ham
- 1/2 cup corn kernels
- salt + pepper to taste
Heat oven to 350F or 175C. Grease a rectangular baking pan approximately 12in (30cm) with baking/parchment paper.
Lightly whisk eggs together.
Add rice flour and mix well.
Add onion, bacon, corn, and cheese and combine.
Season with salt and pepper to taste.
Pour mixture into baking tray and bake for 30 minutes until lightly golden.
Remove from oven and allow to cool before serving.
