These apricot bliss balls are simple and easy to make with only 5 ingredients. You won't need fancy seeds or nuts and are perfect for fussy eaters or those who want something a little sweet, yet still healthy.

dried apricots

honey

vanilla extract

extra coconut for rolling

Instructions

Blitz all ingredients together in a food processor.
▢
Using a tablespoon, scoop mixture and roll into balls. Then roll each ball into coconut to coat.
▢
Leave to set in the fridge or freezer before serving.
Notes
If you find it hard to roll out the mixture, you can wet your hands slightly before rolling each ball.
These are great for freezing and will keep in your freezer for months.
