  • 1 gluten-free cake mix
  • 100 grams melted butter (or equivalent vegetable oil)
  • 1 egg
  • Any optional mix-ins, approx. 1/2 cup

Instructions
 

  • Preheat the oven to 350°F (175°C). Line a baking tray with parchment paper.
  • In a medium bowl, combine the gluten-free cake mix, melted butter (or vegetable oil), and egg. Stir until a thick, dough-like consistency forms. If adding mix-ins, gently fold them in now.
  • Scoop tablespoon-sized portions of dough onto the prepared baking tray, spacing them about 2 inches apart.
  • Bake in the preheated oven for 8-10 minutes, or until edges are slightly golden. Be careful not to over-bake; cookies should remain soft in the center.
  • Allow cookies to cool on the baking tray for 5 minutes, then transfer them to a wire rack to cool completely.
