Place 125 grams cream cheese, 100 grams cheddar cheese, 50 grams milk, salt and pepper, and optional gluten-free taco seasoning (if using) into a small saucepan.
Heat over low heat, stirring continuously to prevent sticking or burning.
Continue stirring until the mixture is fully melted, smooth and glossy.
Pour into small containers.
Allow to cool at room temperature, then refrigerate until fully set before serving.
- Keep heat low to prevent separation.
- Store in fridge up to 5 days.
- Serve with gluten-free rice crackers or gluten-free Jatz-style crackers.
