Cheese Dip (Gluten-Free, Lunchbox-Friendly)

Equipment

  • Small saucepan
  • Small containers (around 60ml / 2 oz each)

Ingredients 

  • 125 grams (4.4 oz) cream cheese, cut into small cubes
  • 100 grams (3.5 oz) cheddar cheese, cut into small cubes
  • 50 grams (¼ cup) milk
  • salt and pepper, to taste

Instructions

  • Place 125 grams cream cheese, 100 grams cheddar cheese, 50 grams milk, salt and pepper, and optional gluten-free taco seasoning (if using) into a small saucepan.
  • Heat over low heat, stirring continuously to prevent sticking or burning.
  • Continue stirring until the mixture is fully melted, smooth and glossy.
  • Pour into small containers.
  • Allow to cool at room temperature, then refrigerate until fully set before serving.

Notes

  • Keep heat low to prevent separation.
  • Store in fridge up to 5 days.
  • Serve with gluten-free rice crackers or gluten-free Jatz-style crackers.
  • Not suitable for freezing.
