Fried Rice Patties - Gluten Free & Perfect For Lunch Boxes

These fried rice patties are a perfect way to use up leftover rice and make a nutritious and appealing lunch or snack.

Ingredients
  

  • 4 cups cooked rice (cooled)
  • 1 cup mixed vegetables of your choice (Here I used peas, corn, red peppers/capsicum)
  • 1/2 cup ham or bacon pieces
  • 2 tbsp gluten free flour
  • 1 egg lightly whisked
  • 2 tsp tamari or gluten-free soy sauce

+ Spray oil if required for frypan

    Instructions
     

    • In a large bowl combine the cold rice, vegetables and ham or bacon pieces.
    • Add in the whisked egg, gf flour and gf soy sauce and combine well.
    • Warm frypan to a medium heat and spray lightly with oil.
    • Place small balls of rice mixture into the frypan and flatten lightly.
    • Cook for 2-3 minutes on each side, making sure they are cooked through.
    • Place on a cooling tray and continue until all mixture is cooked.

    Notes

    • This recipe is very versatile and you can make adjustments based on how much rice you have leftover or what vegetables need using up. You can halve it, double or even triple.
    • Need to make them vegetarian or concerned about leaving them in a lunchbox half the day? Then leave out the ham/bacon. 
    • The two components that are at risk here of not making them truly gluten free is the soy sauce and the flour so be triple sure you are using the gluten free versions of both!
